Project Description

Delicious Raw Chocolate Cake

Here are 2 different variations of the recipe with the same ingredients. It is hard to believe that this not a sinful chocolate fudge cake but actually a healthy alternative.

Please be playful and creative with my recipes, they are not written in stone :o)

15 soaked Dates
400 ml dried shredded Coconut
25 Brazil Nuts
9 dried Figs
1 espresso cup of soaked Goji-berries
2 Avocados
1 small Banana
4 tablespoons of extra virgin Coconut oil
4 tablespoons of raw Cacao powder
3 tablespoons of unprocessed Honey
grated skin of 2 organic Tangelos
juice of ½ Tangelo
2-4  tablespoons of good Water
some drops of liquid Stevia extract – optional if you like it sweeter

Put the dates, brazil nuts and coconut in the Food-processor until it is nicely homogenised and has a sticky consistency. Rub some coconut oil in your cake tin and press crust evenly and firmly (approx. 1 cm thick, 4-5 cm up the wall of the tin). Place in the fridge.

For the filling add the avocados, banana, gojis, figs, raw cacao powder, coconut oil, honey, tangelo skins and juice in blender and process until smooth. Add stevia if more sweetness is desired. Put on top of crust and spread smoothly. Place in the fridge for several hours to set. Enjoy

This variation has little chewy bits and seeds in the chocolate filling from the figs, the gojis and tangelo skins , which is very nice, however, for the second variation we put these ingredients in the crust to achieve a smooth filling.

Second Option:

For the crust use the figs, coconut, brazil nuts, tangelo skins and the soaked gojis, maybe add 1-2 table spoons of water, proceed as above recipe.

For the filling use soaked dates, avocados, banana, raw cacao powder, coconut oil, honey, tangelo juice in blender and process until smooth. Enjoy
